Well this are absolutely delicious!! I remember the first time I tried them, must be about 10 years ago now, and my sister in law made them for dinner one evening…. yum! I got the recipe straight away, they were so so easy to make and I have been making them ever since! There are a winner with kids and actually with grown ups! they make a perfect side dish and also great for lunch boxes and picnics.
So here it goes
- 3 large courgettes, grated
- 1 large onion, chopped
- 3 organic eggs
- 3 tbsp plain flour
- 5 cloves of garclic, sliced fine
- 3 tbsp olive oil
- 200g feta cheese
- fresh herbs if you have or dried if not
- 1 tsp of paprika
- cayene to taste
- Salt & pepper
Grate the courgettes and salt them leaving them to sweat for 10 min. Squeeze out as much water as possible. Heat up olive oil and fry the onion, garlic, add the courgette and fry for about 5 min or until soft.
In a bowl beat the eggs, i beat them until quite foamy, add the flour and beat until smooth. Crumble the feta and add to the eggs, add herbs, spices, salt and pepper.
Now beat into the eggs the courgette mixture while warm.
Season to taste.
Heat the oil and drop tablespoon size paties to the pan. Give it a couple of min each side and they are done!

Also you can play with the recipe and vary the flavours! Try and add some sun dried tomatoes next time!
