Two of my favourite flavours. They are a great combo and a famous one! Piña Colada!
Ok the recipe…
- 140 g of coconut sugar
- 140 g of butter
- 3 organic eggs
- 85g desiccated coconut
- 2 teaspoons of baking powder
- 140g of flour
- 1 pineapple ( cut half of the pineapple into small cubes, and the rest slice for the upside down)
- 3 tablespoons of sugar for the caramel
Mix the sugar and the butter, add the beaten eggs, the coconut, flour and baking powder.
Cook the pineapple cubes with a little water. Drain the juice, and add them to the cake mix.
Make some caramel with the pineapple juice. Add 2 – 3 tablespoons of sugar.
Pour caramel in the 23 inch tin, add the pineapple slices, and finally add the mix.
Cook at 180 C for 40 min.
