Upside down Pineapple & Coconut cake

Two of my favourite flavours. They are a great combo and a famous one! Piña Colada!

Ok the recipe…

  • 140 g of coconut sugar
  • 140 g of butter
  • 3 organic eggs
  • 85g desiccated coconut
  • 2 teaspoons of baking powder
  • 140g of flour
  • 1 pineapple ( cut half of the pineapple into small cubes, and the rest slice for the upside down)
  • 3 tablespoons of sugar for the caramel

Mix the sugar and the butter, add the beaten eggs, the coconut, flour and baking powder.

Cook the pineapple cubes with a little water. Drain the juice, and add them to the cake mix.

Make some caramel with the pineapple juice. Add 2 – 3 tablespoons of sugar.

Pour caramel in the 23 inch tin, add the pineapple slices, and finally add the mix.

Cook at 180 C for 40 min.
