Turmeric Scramble & Saute tomatoes


This breakfast is lovely, normally we have it on the weekends as it takes a bit longer to get it ready during the week days. The colour of the turmeric on the eggs is so bright, mouth watering. Senses awaken by the sight of such view!

Ok yes breakfast is my weak point, or perhaps my strong one as I try and make it the biggest meal of my day… 🙂

Eat breakfast like a king they say….!

This recipe is great, is very tasty and is also healthy! you get protein from the eggs, you get all the goodness that comes from the sourdough bread, the health benefits attached to turmeric   (known to have  anticancer warding properties, natural antibiotic from garlic, excellent source of vitamins coming from the tomatoes ( try and get them organic to get the most benefit and avoid nasty chemicals!)

Ingredients serving 4

  • 6 organic eggs
  • 1 tablespoon of organic turmeric
  • Salt, pepper and herbs
  • 4 organic tomatoes, sliced
  • 4 cloves of garlic, sliced
  • olive oil
  • sourdough toast

Slice the tomatoes and the garlic. On a heated pan cook the tomatoes on a slow heat on both sides. Add the garlic, salt and pepper and some of your favourite herbs. The tomatoes will get soft and once they are,  they are ready!

Beat the eggs in a bowl and add the turmeric, salt and pepper.

Add the eggs to a heated pan with a drizzle of olive oil  and scramble!

Get you toast ready, drizzle some extra virgin olive oil and place your scrambled eggs and tomatoes and you are ready to go!
