Last Friday I had one of those moments where my youngest asked me to please not to have a home-cooked meal and instead have some fun food, particularly he wanted pizza.:|
I wasn’t ready to make sourdough pizza as not enough time to get the dough ready for dinner… and I didn’t want to buy one… so after a few negotiations we agreed to make a fun burger!
We went together to get the ingredients and soon he got totally involved on our evening meal… he decided he wanted fish, and the burger should be crispy.. we got fresh Cod from the fishmongers, and some organic tomatoes and lettuce plus a few bits to make it tasty. He chose the buns and he asked me to help making the burgers.
Now the whole process took some patience and negotiations but the outcome was brilliant. He felt involved and that he had a voice, he was excited on the gathering of the ingredients, he was creative and he was looking forward preparing, cooking and eating it.
Also we got talking about food, about the importance on what we eat, I know he is young and I know one has to be flexible, in fact we really try! We make a point every now and then to let them chose the restaurant when we go out. It’s their choice where we go. Is quite fun actually and where ever we end up eating, the conversations naturally evolve around food, they comment on the quality, on the way they think it has been cooked, on how it’s been cooked… it’s really cool!
I believe that keeping an open dialog with our children and giving them full attention is very important, the message that as parents we would want to pass on, filters in when you are engaged and present.
Back to the burgers..
Ok here is the recipe for 4
- 4 Cod steaks
- 1 organic egg
- chopped coriander
- 1 tablesppon of organic turmeric
- Salt and black pepper
- bread crumbs
- 4 buns
- sliced tomato
- half a lemon
- 2 red onions, caramalised
- sliced gherkins
- finely chopped lettuce
- Your favourite sauces…( Mayo and mustard goes really well with the burger)
In a bowl place the egg, turmeric, finely chopped coriander, and salt & pepper. Whisk and dip your cod steaks in, making sure they are covered in the egg mix, evenly.
Then on a plate put some bread crumbs and coat your fish with them
Slice the red onions and caramelise them so they are ready.
Chop the tomatoes and mix in some finely chopped coriander, with a dash of lemon juice.
Finely chop the lettuce, slice the gherkins
Now you can get your steaks and fry them in a pan. As they are quite chunky make sure you turn them and cook them throughout.
Open the buns and get some mayo on the base of the bun.
Add the gherkins, lettuce, cooked fish, your caramelised onions, your tomatoes and I added some Dijon mustard on my bun.
I served it with Sweet potato wedges.
It was truly a delicious meal, very very tasty, perfect to end up the week. Really fun, simple, and the best of all both boys said ” we could have this every day! ”
