Beet, Apple & Ginger Slaw

This salad is refreshing, colourful,  healthy, delicious and so so simple!

Goes really well as a side dish of rich meals, for its refreshing flavour.

All the ingredients have great health benefits, like Beetroot is a well known  root for its anticancer properties, great amounts of Vitamin C, boosting your immune system, packed with fiber, minerals and manganese etc

Ginger aids digestion,  nausea, helps with inflammation and boosts your immune system

I used Apple Cider Vinegar “with the mother” in the salad dressing, mainly because i love it, and secondly is just so good for you, really great keeping our gut healthy, and so much more!

Anyway here is the recipe

  • 2 grated beets
  • 2 grated apples
  • grated organic ginger
  • chopped coriander
  • For the salad dressing : Extra virgin Olive oil, Apple Cider Vinegar, raw honey, salt and pepper.

Toss together the ingredients in a bowl and drizzle some of this lovely immune system fighting salad dressing!
