Roasted Vegetables, feta, green beans, pomegranate and tahini sauce with brown rice.

I have lots of favourites as i loooove food, good food, anyway this one is a classic, and yes one of my favourites :p

It’s easy to make, and very quick! Normally with whatever vegetables you have in the fridge, cook some rice, roast some veg, if you have some feta and pomegranate then why not, they add in flavour, texture and taste, but if you don’t they could be replaced or just not part of the menu that day. The idea is to get a healthy, low cost, and most of all a tasty dinner!

So more less the ingredients I used for this dish, serves 4

  • 2 cups of organic brown rice
  • 1 aubergine
  • 1 courgette
  • small butternut squash or half a big one
  • 2 big red onions
  • 1 red pepper
  • 2 medium beetroots
  • a whole head of garlic
  • olive oil, salt and pepper
  • half a pomegranate
  • half packet of feta cheese
  • steamed green beans (125g)
  • Tahini sauce
  • lemon

Chop the veg and put them in a baking tray, tossing them with salt, pepper, herbs and olive oil,. ( don’t add garlic yet as they will get burned) and bake for 15 min @ 180 C.

Cook the rice and prep the green beans ready to be steamed.

For the tahini sauce

In a food processor or blender add   1/2 cup tahini, juice of 1 lemon and 1/4 cup water, pinch of salt and mix. Depending on the consistency you can add more water if it’s too thick.

Check how the vegetables are doing, toss them over and add the garlic cloves, and cook for a further 15 min.

Once vegetables are ready, serve the rice, drizzle a bit of virgin olive oil over, place the vegetables on top, get the feta & pomegranate and spread over the vegetables, I normally put some olive oil, lemon and tamari on the green beans before adding them to the dish, and to end drizzle some lovely tahini sauce over the lovely food!

Really hope you enjoy the dish, and remember that really you can roast any vegetable you have, change your greens, add a different sauce, cheese… this is just an idea!
